Think of hot pots as a mingling of tasty layers: broth, foundation ingredients (basic foods found in every dish), main ingredients, natural flavorings, accents and garnishes. Hot pots usually include thinly sliced meat, leafy green vegetables, mushrooms, tofu, dumplings and seafood. All the ingredients are simmered in one pot that is shared by family or friends around the dining table.
